The Domaine des Soulié is located 35 kilometres northwest of Béziers in the Appellation Saint-Chinian. It has been family-owned since the 17th century.
A wide range of grape varieties is cultivated: Grenache, Syrah, Carignan, Cinsault, Merlot, Pinot Noir, Malbec, Sauvignon, Marsanne, Grenache blanc. In addition to the chalky soils, the variety of grape varieties and the modern cellar technology, it is above all the decades of experience in organic viticulture that characterizes the wines of the Domaine des Soulié.
In the modern cellar, the ambitious winemaker Rémy Soulié works in a mélange of tradition and experimentation. Here, individual cuvées are created with great sensitivity, to which he allows different barrel deposits to thrive. He usually uses so-called double barriques. These are built just as carefully from the finest oak woods as the smaller 225-l originals. However, the effect on the wine is more moderate, as the surface of the wood in contact with the wine is relatively smaller.
The choice a winemaker makes when choosing his barrels is certainly almost ideological, but Rémy Soulié has the “nose” and the “hands”. He proves this year after year with his great wines.
